Ful Medames Shakshuka

Ful Medames Shakshuka (Fakfuka©) with extra virgin olive oil and some cracking eggs! Guys, I've decided that this is my signature dish. So easy to make, and so Instagram friendly and is guaranteed to be a hit. Go ahead and give it a try!


Recipe

Ful Medames Shakshuka

To make for 4 (or 2 hungry people) you’ll need:

  • 1 can fava beans, drained (or 1 1/2 cups homemade cooked ful)

  • 1 finally chopped onion

  • 2 cloves of garlic, finely chopped

  • 1 yellow bell pepper, chopped

  • 1 can chopped tomatoes

  • 1 tbsp olive oil

  • Juice of a lemon

  • 4 large eggs

  • Parsley (to garnish)

Directions

  1. Preheat oven to 180C. Add olive oil to a cast iron or oven proof skillet, add onion and sauté until soft.

  2. Add garlic and bell pepper and cook for a 2-3 minutes, then add tomato and fava beans. Add lemon juice and season.

  3. Cook for about 5 minutes stirring and crushing with the back of a wooden spoon until well incorporated.

  4. Make 4 wells, crack in the eggs and season with salt and pepper. Bake for 7-10 minutes until egg whites have set and firm to the touch. Remove from oven, garnish with parsley and drizzle extra virgin olive oil on top. Serve with toasted bread of choice. Bel hana!
